Meet Chelsea & BrianA little baking.
A lot of high hopes.
Hashbrowns and High Hopes is co-owned by Chelsea and Brian, in Midland, Texas. What began with cinnamon rolls baked at home grew into a business known for New York-style bagels and king cakes.
Chelsea and Brian continue to build Hashbrowns and High Hopes together. Brian came up with the name, and Chelsea’s baking brought it to life.
Our story has been featured in the Midland Reporter-Telegram: Our bagel beginnings (2022) and Our king cake story (2025). These articles reflect the business at the time they were published.

In the beginning, Hashbrowns and High Hopes was completely run by family and friends. Our early market setups were where we shared our food, met customers, and started growing the business together.
These photos are a look back at those startup days—the familiar faces, colorful tents, and helping hands that were part of our beginning. We’re grateful to everyone who helped us get started.
